With all the mexican food blogs I post you probably think all I eat is mexican. If i had my way this would be true. I wanted to make something different so i decided to try out Mexican Lasagna. It was amazing.
You will Need:
3 tbsp extra-virgin olive oil
2 lbs ground turkey
2 tbsp chili powder
2 tspn ground cumin
1/2 chopped red onion
1 cup medium taco sauce (I used a whole bottle of ortega brand)
1 1/2 cup frozen corn
Salt
6 flour tortillas
3 cups shredded mexican style cheese
2 chopped scallions
Directions:
Preheat your oven to 425 degrees. Add 2 tbsp olive oil to a large skillet and brown your ground turkey. Season with salt, chili powder, ground cumin, and red onion. Add your corn and taco sauce.
Grease your baking pan with the remaining olive oil. Cut your tortillas in half. Add half of the meat mixture to the bottom of the baking dish, layer tortillas on top, then layer shredded cheese. Repeat. Bake for 12 minutes and top with scallions. Serve.

i hate eggnog.
I actually can't stand eggnog but for some particular reason my family is obsessed with it. During the holiday season i thought it would be nice of me to make them something involving this disgusting ingredient. :)
I settled on an Eggnog custard pie that i thought looked somewhat edible. I honestly couldn't tell you if it was good or not but four people ate two pies in two days if that gives you a response. Here's the recipe.
you'll need:
2 refrigerated pie crusts
1 cup sugar
4 large eggs
1 (12 oz) can evaporated milk
3/4 cup water
1/4 cup brandy
1/8 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 ground cinnamon
Preheat your oven to 350 degrees. Beat the eggs and sugar with an electric mixer in a large bowl. Then add milk, water, brandy, and salt. Pour into the pie crusts. Then sprinkle on top with nutmeg and cinnamon. Bake for about 45 minutes or until center comes out clean.
